Canneto Pavese Batti le labbra

Known as Bata Lavar (“lip smacker”) in Cannetese dialect, Batti le Labbra or Raviolo Grande is a type of agnolotti pasta savoured in broth, typical of the Canneto Pavese area. Tradition has it that the head of the family and the men would get four on their plate, while the women and children were served two. In times past, kitchens did not have the modern tools as today. The good housewives thus used their creativity in cutting off the pasta shape by means of a glass, the most suitable shape for making agnolottis.
